COOKING AND ETHICS... Against an ultra intensive agriculture which doesn't respect environnment,
Because gastronomy doesn't suffer any scale of values, our challenge is to have our place between the very good-very simple and the very good-very sophisticated. The menus change, the demand for the quality of products and the seasoning remain. The list of wines always evolves towards the ideal of a wine with a strong personality (served at the right temperature). Our card is deliberately short so that you can take whatever you like : one course or two starters...Those who want a full meal can choose from the card and have a full menu for 33€. A guide-book called our cooking "revised terroir" which suits us perfectly. Although definitely of our time we enjoy bringing out again an old grand-mother's recipe ! As for the wine... between 150 and 200 little bits of happiness are resting in our temperate cellar. Don't open the conversation on the subject or you might eat cold... Fortunately we have written a booklet with a description of everyone of them. If the prices go from 14€ to 120€ for the bottles, we also suggest a choice of three red and three white wines plus champagnes and mellow wines which you can have by the glass at the same price as the bottle. |
